Grilled Scallops with Nectarines - Tastes as Pretty as it Looks

The plate that you see above is my greatest culinary accomplishment to date - I was really happy with the way that it looked and tasted. The recipe came from Bon Appetit and despite many steps, it was fairly easy to execute.

What I loved most about this dish is that it's healthy and summery - mixing fruit with veggies, containing a smoky taste from the grill. The lime dressing that was used on everything was nice and citrusy with a hint of spice from the cayenne pepper (the recipe calls for piment d'Espelette or chili powder but I substituted with cayenne pepper, which was perfect). I'd also recommend using regular coarse Kosher salt instead of the fleur de sel sea salt, which the recipe requests.

One of the best ingredients in here was the fresh corn--I loved that I didn't have to cook it at all, just taking the kernels off the husk with a knife. The result was crunchy, fresh and so sweet. Overall, this is a lovely summer dish that doesn't involve a lot of cooking. Enjoy the recipe.
