Margot's Drunken Spaghetti is a Huge Hit!

It's a fact - whenever I read Margot's creative recipes, they not only make me hungry, they inspire me to branch out and cook things I've never dared to cook.  So when I saw this really interesting recipe for Spaghetti all'Ubriachi (aka Drunken Spaghetti), I knew I had to just go for it.  If you take a look when Margot posted this recipe (in January), you'll see that I took my sweet time with it, but nonetheless I finally made it last weekend.  The result was so delicious and so unlike anything I've ever tasted, that it'll surely be a Foodista family repeat.

The unique aspect about this dish is that it doesn't use a sauce.  Instead, Margot cooks the spaghetti in a full bottle of red wine, which gives ordinary white noodles a beautiful eggplant color.  It's gorgeous to look at and really wonderful to eat.  Instead of using bacon in my version, I substituted with crispy prosciutto, which was a hit.  I only used a small amount of halloumi cheese, which I sprinkled on top (not in the above picture though) but even sans cheese, this pasta dish is a home run.
