During the cold weather months, I’ve been experimenting with lots of different soups. Even though the soup I’m about to tell you about is more of a spring/summer dish, it’s really great to enjoy anytime. I loved its easy preparation, consisting of only 6 ingredients that are easy to find in one's pantry from the get go. The only ingredient I didn't have was the white wine and I substituted that with a little splash of cider vinegar, which did the trick.
What I really love about this soup are its light, refreshing flavors and the sweetness that comes from the peas. The tarragon gives it a jolt of personality and elevates this soup from something ordinary to a smart, thoughtful dish. While this soup can definitely fill you up on its own, I recommend pairing it with a hearty piece of bread such as a focaccia or a nice flatbread. My personal recommendation is the rosemary focaccia bread from Artopolis Bakery (nicely toasted, of course). Take a bite out of that, and enjoy.
