Healthy Mediterranean Style Cod Recipe


I've been trying to cook at home more and more to ensure I'm eating wholesome, healthy foods.  Of course I'll never give up trying new foods in neighborhood restaurants, but there always comes a time for a little detox and healthfulness.  Here's a quick, easy and nutritious dinner I cooked up the other night, made of fresh, natural ingredients that took less than 20 minutes of active cooking and less than an hour to get on the table.

Healthy Mediterranean Style Cod:

Ingredients (serves 2)
1 lb of fresh cod
Handful of sundried tomatoes (kept whole)
Handful of pitted kalamata (or Spanish) olives
Olive oil
Pre-made salmon spice rub (or you can combine salt, pepper, paprika and cayenne pepper)
1 cup of brown rice
2 scallions, chopped
1/3 cup of dried cranberries

Directions:
Cook rice according to directions on the packaging. Add chopped scallions and dried cranberries.  Season with salt and pepper.

Preheat oven to 425 degrees.  Brush fish with olive oil and season with salmon spice rub and then top with sundried tomatoes and olives.  Bake for about 7-10 minutes, until the tomatoes show some char.  Cool for 2-3 minutes and enjoy together with the prepared rice.
